We make wines which are typically called “natural”, however, we prefer to refer to them as “traditional”, or “artisanal”.

Our grapes are harvested by hand into 45 kilo boxes. Then, destemmed by traditionally manual destemming machine, which we turned into a “bike machine” (much more fun with much less effort!). Then, depending on the type of wine, grapes are either pressed by a traditional, hydraulic press, or simply macerated in oak barrels, before they get into the press.

Fermentation and aging take place in old oak barrels as well, as we believe that natural, micro-oxygenative environment is the way to achieve complex and stable wine. Most cuvees are free from all chemical substaces – including SO2. However some reds are treated with 1g/hl before bottling to acheive stable fault free fruit bombs for your drinking pleasure. This typically leads to a total sulphite level of 10-18mg/l.

Our wines are bottled in two rounds, depending on their maturity. First bottling wave comes in spring, second – late summer. Before bottling, wines are taken off their lie, assembled, analyzed, and then – when ready – poured into bottles by gravity using a hand-bottling machine.

As we said – we love art, and this is why we give our bottles some extra attention. We prepare our own wine labels, either printed or spray-painted. Each of the bottle is corked, labeled and  waxed by hand, before it gets into the box to finish on your table.
